Magimix™ Gold improver
Magimix™ Gold is an improver that is produced specially for pastry products (namely those with high content of fat and sugar) and puff yeast products.
- improves gas-retaining capacity (contains high-quality emulsifier that connects lipids with gluten proteins);
- helps to avoid dark-colored bubbles on the surface;
- provides good stability of shape of the dough semi-products during the final proofing;
- provides better elasticity of the dough due to the combination of emulsifier and oxidizing agent (ascorbic acid).
