Magimix™ Grey improver
Magimix™ Grey is used in manufacturing of the mass kinds of bread made from wheat flour: French loaf, pan and hearth bread.
Usage benefits:
- increases water-absorption capacity of the dough;
- improves stability of shape of the dough semi-products due to ascorbic acid that strengthens gluten network;
- provides better dough elasticity;
- blanches the crumb of the ready-made product;
- allows getting good volume of the dough semi-products after the final proofing.
- Dosage:0,1 – 0,3 % to the flour weight
